Also known as Meridian fennel and Persian cumin, this herb is often grown for its thin, crescent-shaped seeds but all parts of the caraway plant are edible. It has delicious anise-flavored seeds, which are often used in baking. Grows 2-3 feet tall.

Planting Information:
When and where to plant: Select a sunny location with well-drained soil and sow seed in the fall or spring as soon as ground can be worked. Does not transplant well. Cultivate soil and enrich with vegetable food. Firm soil over seed.
Care: In cold, climates, protect plants in winter.
Harvesting: Cut heads when seed turns brown and place, head down, in paper bag. Dry in warm place, then separate seeds and store in air tight jar.
Storage: Store seed in cool, dry place. Heat and moisture can severely reduce germination. -
